The anchovy sauce is the amber-colour fluid that comes out by letting ripen the anchovies fished in spring (between March and the beginning of July) in salt.
The anchovies, as they are fished, are cleaned by hands and put in salt in proper wood boxes called ‚Äúterzigni‚ÄĚ.
After 4-5 months, the fluid that comes out of the hole done at the bottom of the container gets taken and used as a seasoning unique in its kind, particularly suggested to dress spaghetti and linguine.
