Ingredients for 4 people
Place the Organic Chickpeas to soak in warm¬†water the evening before.
Cook in plenty of lightly salted water for about¬†four hours; drain and reserve the cooking water.
Mix until you get a smooth cream and, if necessary,¬†gradually add the reserved cooking¬†water until you get the desired consistency.
Add to the mix four tablespoons of Tahini¬†sauce.
Mix well, add salt and pepper to taste.
Vegan recipe: add lemon, garlic, parsley, and¬†pepper.
Put the Hummus at the center of the plate,¬†superimpose a teaspoon of Tahini sauce, sesame¬†seeds and a few drops of extra virgin olive¬†oil.
You can serve it as a main dish, an appetizer¬†for an aperitif or it can accompany goat¬†cheeses and creamy cheeses.
