SEAFOOD PASTA SAUCE: SARDINES AND FENNEL

Pasta with sardines is a classic Sicilian dish and a metaphor for the island’s cuisine since it contains most of its characteristic ingredients and flavors.


The glass jar contains sardines, fennel, currants and pine nuts in extra-virgin olive oil.


It's a ready-to-use seafood pasta sauce.


We suggest trying sardine and fennel pasta sauce with Benedetto Cavalieri Penne.


Cook the pasta "al dente" - drain and reserve 10ml of the cooking liquid.

Meanwhile, heat the sardine and fennel condiment in a large frying pan with the reserved pasta cooking water.

Toss everything together for another 2 minutes.

A true delicacy pasta dish.

Although the recipe for pasta con le sarde was first published in the 19th century, no one seems to know for certain how the dish came to be.


Legend has it that Arabs who invaded Sicily in the first millennium improvised it from sardines they caught in the harbor and the wild fennel, pinoli, saffron and currants they found in nearby hills.


Pino Correnti quotes the authentic tomato-less recipe in Il Libro d’oro della Cucina e dei Vini di Sicilia (The Golden Book of Sicilian Cuisine and Wine).
