Pepper jam is a jam of medium consistency, containing whole and glazed pepper pieces.


The appearance of the jam reflected all the brilliant shades of yellow, orange, red and green, typical of peppers.


RECOMMENDED PAIRING:

The nose reveals a hint of vanilla while the slightly sweet taste is well suited to the combination with white meats and smoked cheeses.

This is SI.GI. Together Silvano Buccolini and Giuliana Papa decided to reinstate the old, traditional, local recipes from Macerata.


Thanks to their work, long-forgotten fruits and processes have been rediscovered: Sapa (grape syrup), the Visciole Under The Sun (cherries), Apple Mint Jelly, Morici (black mulberry whole fruit), white figs, wild plums called Brugnolette, Viccotto and Vino di Visciole (sweet wines) and "Giuggiolone " an aromatic wine-flavoured drink, to send you into "Giuggiole" i.e.raptures.


Jams, jellies, fruit sauces and condiments made entirely by hand, using simple tools, such as different-sized vegetable mashers, and traditional cooking methods like boiling in an uncovered pot.


No chemical thickeners are added: jellies and jams are free of pectin, while pickles do not contain stabilizers or preservatives.


The differences in density and consistency of the product depend exclusively on the cooking methods, while freshness is guaranteed by natural processes of preservation.
