These soft wheat flours come from land away from pollution, cultivated through integrated pest management, which allows to reduce a lot the use of plant protection products and synthetic products.


They are the result of a short and certified supply chain, all flours are obtained from selected Piedmont grains and collected within fifty kilometers from the mill.


All the flours are stone ground, using only solar energy produced through photovoltaic panels installed in the mill.

THE SOFT WHEAT FLOURS

“Triticum aestivum” (common wheat or bread wheat) is a major global cereal grain essential to human nutrition. Wheat was one of the first cereals to be domesticated, originating in the fertile crescent around 7000 years ago.


The common wheat is characterized by crumbly grains, from the grinding of these grains you get the white flour for the production of bread, pizzas, sweets and other leavened products.


There are different types of white flour of soft wheat (flour type 00, 0, 1, 2 and whole wheat flour)

Flour 00: This is the most refined flour. Most of the bran and wheat germ have been removed during the milling process.

Flour 0: Slightly less refined than the previous one but deprived of most of its nutritive principles.

Flour 01-02: Characterized by large granules and a greater quantity of bran and wheat germ than the previous ones.
Flour 02 has excellent nutritional characteristics and is easier to process than whole wheat flour.

Whole Wheat Flour: It is obtained by grinding and sifting of healthy and ripe soft wheat kernels freed from foreign substances and impurities.
In other words, whole wheat flour is obtained by grinding whole wheat seeds.


From a nutritional point of view, less refined flours (01 and 02) and wholemeal flours are the richest in fibers, fundamental for the correct functioning of our organism.
